It’s a Mustang, his rates actually go down anytime he’s not around pedestrians.

Two hands on the wheel!
You really don’t need to take one off unless you’re presently shifting, then right back to the wheel.
It really does make a difference in terms of control and stability once you start to get close to the edge of what the car is capable of.

And even when two hands were used, having their placement vary all over the place on the wheel isn’t ideal. If you go to a performance driving school, they often teach 9-and-3 o’clock placement, as it offers the most range of rotation without having to move hand placement. If the car gets out of shape and you need to make a correction while you have only one hand on steering (centered at the top of the wheel or otherwise), you could very easily have a bad time.
